A seasonal salad that brings out the best of these beautifully coloured beetroots. Early beets are combined with sweet and sharp apple, and the feta curd adds a subtle softness to this textural dish that's as pretty as a picture once plated. This is how I would present this dish in my restaurant. It's easy and a joy to assemble – and one of my favourite recipes in this book.

When the ingredients are listed consecutively with a specific measurement to start and commas separating the ingredients, use that specific measurement for each of the ingredients listed, eg., ‘Mix 2T smkd paprika,lemzest,olv oil’ means ‘2 tablespoons’ of each smoked paprika, lemon zest and olive oil, not a combined total of 2 tablespoons. When garlic is mentioned, unless specified otherwise, it refers to finely chopped garlic. Herbs are always fresh unless otherwise stated. ‘Serves 1, 2 or many’ means that you can multiply the recipe to serve however many people you want. Below are the short forms used in the recipes.

Making your own soap is incredibly gratifying. It is lovely knowing that each time you have a shower or bath the lathery bar is filled with herbs and flowers of your choosing to make all your favourite smells. It can be a little daunting making soap from scratch as it usually requires a chemical called lye, but this recipe does away with the need for lye, so it’s a great one to start with. This recipe uses instead a natural product known as ‘melt and pour soap’ as your base. This, along with all of the equipment, is easily available online.
